I think this is a bunk car. Based upon what I did not see, it does not appear to be a shower or a cook car.
This is a ballast cleaner. It removes the ballast from the outside of the tracks, cleans it, and then puts it back. Whatever is removed, is transferred by conveyor.
This hopper car is used with the above ballast cleaner. It has a built in motorized conveyors to move the trash from the ballast cleaner to the next car, when this one fills up.

According to the "Southern Railway Color Guide to Freight and Passenger Equipment" by James Kinkaid, this was a 100 ton hopper turned to into a ballast cleaner.
